A Prayer for Boldness

Dear Father,

When I think about the largeness of life,
I often feel small and unknown.
The task ahead hangs over me
And instead of enjoying the adventure,
I’m embracing the anxiety.
Jesus, help me be strong.
Oh that my heart would dare for you
With total abandonment of my inhibitions.
May your love abolish any fears

Chocolate Mug Cake

Ingredients:
1 heaped tbsp almond meal or any nut mealchoc mug cake1
1 heaped tbsp unsweetened cocao powder
1 tbsp almond milk
½ tbsp honey
1 egg
1 tsp vanilla extract
This recipe makes one serving.
Directions:
It really is so delightfully simple!
Mix all ingredients together in a mug and microwave for 60-90 seconds (depending on your microwave power).
Serve with your favorite nut butter or Greek yoghurt and berries

God Works While We Wait

REFLECTION

If we are honest, we all hate to wait. In fact, most often we say something like, “I can’t believe this is taking so long; it’s costing me time I don’t have!” That’s because most of us consider waiting to be wasting. But it’s not so with our God.
God works while we wait. Even when you can’t see what He is doing, God is always orchestrating the events of heaven and earth to accomplish His purposes for your life. Trust in His unfailing love—love that moved Him to send a Savior from heaven to restore and rescue you. God’s plans for your life will not be thwarted. Wait patiently, knowing that waiting is never wasted when you are waiting on God.

PRAYER

Father, I am here waiting for You. My heart and hands are open to Your purposes and plans for my life. Give me the patience I so desperately need and lead me in my waiting. Forgiveness

Clean Eating

Bell Pepper and Potato Frittata


Egg frittatas are EASY and inexpensive – perfect for breakfast, lunch or dinner! This St Patricks Day Frittata is made with yukon Gold potatoes and bell peppers to create shamrocks!

Egg frittatas are my answer to an easy, inexpensive meal solution whether I'm having it for breakfast, lunch or dinner. For breakfast, I'll serve this with a side of berries or fruit. For dinner, I make a salad on the side and call it a meal!

You can literally throw anything into a frittata and call it a meal, but I thought it would be fun to make this one a St Patricks Day theme which of coarse MUST have yukon gold potatoes, and to create a shamrock design, I sliced my bell peppers into flower shapes – completely optional! This one's vegetarian, perfect if you need a meatless Monday dish idea, and it's naturally gluten-free.


I'm not sure if there's anything quite as beautiful as farm fresh eggs. A friend of mine is raising chickens in her yard and gave me some of her eggs and the colors were so beautiful I almost didn't want to crack them. The yolks are so orange, it's hard to believe I made this frittata with half egg whites.

Ingredients:

  • 4 thin slices green bell pepper, sliced into 1/4-inch thin slices crosswise
  • 4 large eggs
  • 4 large egg whites
  • kosher salt and pepper, to taste
  • 1 teaspoon olive oil
  • 1/4 cup minced shallots
  • 1 (7 oz) medium peeled Yukon Gold Potatoes, diced into 1/2-inch pieces
  • 1/4 tsp garlic powder
  • 1/4 tsp paprika

Ingredients:

Preheat the oven to 400°F.

Crack the eggs and egg whites into a large bowl. Add salt and fresh cracked pepper and beat until blended.


Heat a 10-inch nonstick oven safe skillet over medium heat. Add the oil and shallots to the pan and cook until golden, 2 to 3 minutes. Add the potatoes, season with salt, garlic powder, paprika and black pepper. Cover and cook the potatoes over medium-low heat, stirring occasionally, until crisp and tender, about 12 to 15 minutes.


Pour the egg mixture into the skillet. Carefully arrange the bell peppers on top to create a shamrock pattern if desired. Reduce the heat to low and cook until the edges are set, 6 to 8 minutes.


Transfer the skillet to the oven and bake until the frittata is completely set and cooked through, 8 to 10 minutes. Remove from the oven and transfer onto a large plate. Cut into 4 wedges and serve.

Ingredients:
  • 2 oz Ciabatta
  • 2 tbsp mashed avocado
  • 2 oz grilled chicken breast
  • 3 slices ripe tomatoes
  • salt and fresh pepper to taste

Directions:

Slice bread open and smear mashed avocado on the bread. Season with salt and pepper. Top with tomatoes, chicken and add additional fresh cracked pepper. Enjoy!!

Be Positive

Choosing to be positive and having a grateful attitude is going to determine how you're going to live your life.
One big hump that we must all get over in our lives is dealing with the impossible. As we face life, and as we encounter both the good and the bad, we have to realize that a positive attitude is the key to becoming invincible in life and is also key to accomplishing what many feel is impossible. 

Through the challenges and trials we face in our lives we either allow life to make us better, or we allow life to break us away from giving a full fledged effort for the rest of it. To do "impossible" things we have to confront the most absurd of opportunities, take the boldest of risks, and be who we are at our core day in and day out. 

We also have to come to realize that the only scenario in which the "impossible" will ever be able to defeat us, is when we start thinking in a negative and defeated manner. Stay positive in everything you do, never stop trying, and believe wholeheartedly that failure is not an option!

Never stop learning because life never stops teaching

As we continue to progress in our everyday lives, we must realize that life will continue to unfold the more that we are willing to push and pursue the gaining of wisdom and knowledge in our everyday lives, the more that we will eventually understand and will be able to apply to every aspect in our lives. 

We must also realize that in some instances of understanding, life will unfold more than in other instances. Therefore, we must be patient when it comes to learning new things, because we may not always know how to apply them in our lives without learning everything that we need to learn in order to do so. 

In our lives we have to keep making efforts and strides to continually learn, and from this learning we must also figure out how to apply this newly found knowledge and wisdom to aspects in our lives everyday. Keep searching, and you will keep finding, for the more that you are willing to seek out of life, the more that life will be willing to give you.
